Salmon CroquettesRecipe from Olivia's Kitchen1 cn. Pink Salmon Drain and flake salmon, reserving 1/3 cup liquid. Mix salmon, flour, onions, parsley and dill. Mix in eggs, lemon juice and liquid. Heat oil in an iron skillet. Using a tbsp to shape patties, place them in skillet. (do not pat down until brown and flipped. Saute croquettes over medium heat until golden brown. makes approx. 9 croquettes. Good with cheese grits, home fried potatoes or as a sandwich. |
